Walk into any Italian bakery and, whatever your original intention, look for the pignoli cookie first. It might not be as flashy as the rainbow cookie, but this gnarly little blob is a secret crowd favorite, for good reason. Pignoli biscuits are soft, chewy and completely almondy. The price may seem a bit high, but there is also a reason for this. The ingredients are marzipan, sugar, egg whites and pine nuts. These aren’t ingredients I would jump for on a regular basis, but the holidays are a special time of year when I manage to find the extra $10. Moist, light and bursting with almond flavor, with a light resin aroma, pignoli cookies are unlike any other cookie.
